How did you get started selling branded Brahman beef? +Schneider Brahmans has always focused on incorporating animals into our breeding program that possess top beef carcass genomics. Our +S herd sires and females rank in the top 10% of the breed for Tenderness, REA and Marbling. We decided to start our +S Branded Brahman beef program to take advantage of our Brahman herd’s superior beef carcass genomics.

What type of cattle are you using in your beef program? We use 100% Registered Gray and Red Brahmans in our beef program.

How do you market your branded beef operation? We market our branded beef using social media, radio and newspaper ads.

Where is your product available for sale? Our products are available at our newly opened beef market retail store on the ranch in Fredericksburg, Texas.

What cuts do you offer? What is the most popular? We offer everything from oxtail, heart, liver, osso buco, beef tallow and sweet breads to roasts, ribeyes and all other steak cuts, beef tenderloin, dino-ribs, Brahman humps and ground meat. We offer individual cuts, half and whole carcasses. Ribeye steaks are the most popular.

How is Brahman beef different than other beef? Compared to Bos Taurus breeds, Brahman beef is higher in desirable Omega-3 and Omega-6 heart healthy polyunsaturated fats and lower in undesirable saturated triglyceride fat, making it a Heart Healthy Source of Beef. Brahman beef also has a unique delicious flavor.

Are there any negative preconceived notions about Brahman beef from buyers that you have to address? We have not encountered any preconceived negative notions about Brahman Beef.

How interested are people in buying Brahman beef? We found a great deal of interest and demand by people wanting to buy Brahman beef. We are proud of the high percentage of repeat customers we have after trying our beef.

Are you retaining kill data to be used with other performance data in your herd? We scan 100% of our Brahman steers and obtain 100% hanging carcass grades on them. We use the kill data to verify the accuracy of scan data and EPDs. Currently more than 85% of our Brahman steers grade choice or better on the rail.

Do you have bloodlines that you think are superior based on the meat? If so, please tell me a little more about them. The bloodlines that primarily enhanced the superior carcass traits in our herd are JDH SIR MARRI MANSO 557/4, JDH SIR LIBERTY MANSO 847/5, MR V8 212/3, JJ DIDORCRATA 389, JJ DIDOR CRATA 258 and US Sugar bloodlines. We crossed the carcass strengths of these various sires and their offspring to arrive at a superior carcass Brahman. In other words, if one of these sires or their offspring had strong REA and Marbling performance but lacked Tenderness performance, we would breed a bloodline to their offspring that had strong Tenderness traits. There by working towards a herd that is strong in all three carcass traits – Tenderness, REA and Marbling.

Please describe the biggest challenges of owning a branded beef operation. Our biggest challenge of owning a branded beef program is updating advertising and continually getting our message out to consumers. Priority must also be placed on finding a processor that properly ages, cuts and Cryovac seals our products properly with labels as to the type of cut, net weight and inspection number. Another significant challenge is getting the ABBA to focus significantly more on marketing the positive aspects of Brahman beef to the American consumer and the American beef industry in general.

What else can you tell us about your branded beef program and the herd it comes from? We promote our beef as being USDA State Inspected, locally raised, hormone and antibiotic free. Our calf crops are 100% DNA-verified and in addition to having top carcass genomics, we are very strict on our herd sires and females being phenotypically correct.
